  • When cutting a cake 2 people are always better than 1 especially for larger and more complex cakes. As one distributes the cut slices the other can concentrate exclusively on the cutting.
  • You need a clean damp towel to wipe the knife clean every few slices. If the knife gets too sticky the cake slices will become ragged and untidy on the edges, in some cases the cake slice will end up on the plate in a shapeless mound of crumbles.  
  • For larger cakes with tiers and separators you need to have enough room to rest all the inedible equipment as you go along.  
  Tiered cakes with separators
  • A tiered cake (generally a wedding cake) needs to be cut starting from the top. The smallest top tier is usually removed and set aside as this is traditionally the bride and groom keepsake tier.
  • Remove the second tier and place it in front of you (never attempt to cut a cake whilst still on top of the separators)   The cutting of the cake will depend on the shape of the cake as illustrated below.
  • Whilst square and rectangular cakes are fairly straight forwards to cut the round ones are slightly more complex. Whatever their shape servings usually measure 1" by 2" by the depth of the tier or an equivalent.

Resurrection of the Cake blog!

Hi everyone, I decided to bring back the cake blog. New this weekend are three cakes...The first was a variation of the football and grass cake. Check out the personalized hand painted plaques. I can add a custom team logo or special message to your next cake...The football part of the cake was chocolate, with a vanilla grass cake. The grass is piped buttercream icing.

The other two cakes were for a joint sisters' birthday party. The girls were turning 4 and 6 - and they are big fans of Barbie and the Bumblebee Transformer. The details on both are hand painted fondant. Since I paint it with food coloring, everything is still completely edible. The Bumblebee cake is strawberry with buttercream, and the Barbie cake is chocolate chip.

I have been slacking on the blogging! Busy busy busy....New to check out this weekend is a "Princess Cake." The cake was for the Delaware River Yachting League's Annual Queen's Pageant. The cake was served at a luncheon for princesses from boat clubs all along the Delaware. The cake is white, buttercream, and fondant, with sparkly accents and shimmer. Check back this week!

Belated blog...

Sorry this is a couple days late - I had to catch up on sleep after this weekend of cakes! The first cake of the weekend was for a bridal shower. I have to share the romantic story behind it .... the theme of the cake was "And sparks flew" because the couple said they felt sparks after their first kiss. How cute, right? The cake is chocolate chip and white, and covered in fondant discs. The discs have clouds of sprinkles and glitters to look like sparks. Best wishes to the couple!

The other cake was for my sister's Sweet Sixteen extravaganza. Note to self - don't chaperone 80 high schoolers after staying up all night making a cake! The party was a peacock theme. The four tier cake was French vanilla, white, and pound.

New, New, New!

It was a busy weekend in the kitchen! Three new cakes to check out. The first was for a retirement surprise party. The honoree has been a dedicated St. Thomas the Apostle School knight for many years - the knight statue on top of the cake is wearing her trademark fuzzy slippers. The green, yellow, and white number is pound, chocolate chip, and white cake with buttercream icing.

The next cake was a bridal shower, and the light blush color and floral bouquet were inspired by Sylvia Weinstock.  The bouquet is all handmade gum paste flowers. They include roses, chrysanthemums, hydrangeas, tulips, and an orchid. The cake was almond pound, with a light lemon glaze and buttercream, as well as chocolate chip. Showers of Happiness!

And last but not least, it was my dad's birthday! I made a nautical theme cake because we love to hit the water! The carrot cake is covered in water-like fondant, icing detaile waves, ropes, and a happy birthday life ring.

Check back next weekend for my sister's Sweet 16 extravaganza (and I mean BIG!!) cake, and a festive fireworks bridal shower cake!

Memorial Day Weekend

Several new goodies to check out - a lace tiered cake for a baby boy's christening and a flyers birthday cake. The tiered cake was strawberry, chocolate chip, and white with buttercream icing. The lace detail is a combination of fondant appliques and piped icing.  This lace design would be nice for bridal and other religious celebrations as well.  The Flyers cake was for a suprise birthday. It is chocolate chip.  The puck plaque says "Happy Birthday" of course!

Hi everyone! New this weekend are a baseball jersey and hat cake, for the Aston Middletown Little League. Go Dodgers!

Also, check out the three tier First Holy Communion Cake. The cake is white, chocolate chip, and chocolate with buttercream.  The top has a lace plaque that says "God Bless John Charles."

And, of course I had to make a cake for the women in my life this weekend! The lace cake is light yellow fondant and icing, and a combination of strawberry and pound cake.  This is one of my favorites so far. Happy Mother's Day!!

On Deck: St. Joe's Hawk cake and Relay for Life! Relay For Life will be taking place at Penncrest High School on Friday the 15th through Saturday.  Relay for Life is a great cause, and it would be wonderful to get as many people as possible to attend. Come buy some cake to support the search for the cure!!

Several cakes this weekend. Check out the spring cupcakes, which are pound cake and buttercream, version two of the Phillies Hat, the graduation king-size cupcake, and the Mario and Peach bridal shower cake! The Phillies hat is white cake with buttercream and fondant, and graham cracker "dirt." The home plate is also cake. The pennant says "Happy Birthday..." The graduation cupcake is red velvet cake with buttercream icing. The "king size" make quite a statement! The Mario and Peach cake is by far one of my favorites. The cake itself is chocolate chip and vanilla. The clients have a Mario and Peach topper to add on top of the mushroom. I like the red biting flowers the best! Check back tomorrow to see pictures of a new boy First Communion cake!

You may have also noticed the Michael Jackson cake. Chocolate chip cake made to look the "Beat It" jacket with the white glove. Definitely one of the more unique requests I have had but I love it!

Mother's Day is next week....order the special women in your life a box of buttercreams or a cupcake!
